One of my favorite ways to eat healthy is a big Buddha bowl - full of plant-based proteins, healthy fats, whole grains, roasted veggies, greens, avocado, nuts/seeds, hummus, etc. Today's Buddha bowl was inspired by the lovely @choosingchia. I made Jess's oven-baked green falafel patties for her @vitamix 133K party, and paired them with edamame miso hummus, chickpeas, watermelon & purple radishes, chioggia beets, mixed greens, cumin roasted carrots, purple cabbage and pink pickled cabbage, and dressed with tahini and sesame seeds.
